🥣 Yogurt in Baking: Why It Works (and what to use instead)


Ever wonder what yogurt actually does in your baked goods? The short answer: moisture, tang, and tenderness.

🥣 Why Bake with Yogurt?
Yogurt pulls double (okay—triple) duty in your bakes:

  • Fat for richness and softness
  • Moisture to keep things tender
  • Acidity to activate baking soda and create a better rise and lighter crumb

It’s perfect for muffins, cakes, quick breads, and even pancakes!


🔁 Need to substitute? No problem.
Here’s a quick list for yogurt swaps. Instead of Yogurt, Use:

  • Sour Cream: Richer, similar tang and fat content—great 1:1 swap. (Easiest option!)
  • Greek Yogurt: Thicker texture—if batter feels dry, add 1–2 Tbsp of milk.
  • Skyr: Very thick and high in protein—thin slightly with milk before using or batter will be extra thick.
  • Buttermilk: More liquid than yogurt—use slightly less or reduce other liquids in the recipe. Still gives great tang and acidity for rise.
  • Kefir: A pourable, fermented yogurt drink—similar acidity, but thinner. Use in recipes where a more liquid consistency is okay (like pancakes or cakes). Reduce other liquid slightly if needed.

👉 If you do not bake with dairy for any reason, you can substitute with a vegan yogurt as well, results will vary.

👉 Always stick to plain, unsweetened versions of yogurt for best baking results.

👉 Depending on the recipe, flavored yogurts like vanilla, lemon, or coconut would possibly work as well, but you may need to reduce the amount of sugar in a recipe when doing so. Avoid using any overly flavored or super sweet yogurts in baking.


Here are a few of my favorite baking recipes that use yogurt or sour cream interchangeably:

Strawberry Citrus Muffins - The natural sweetness of strawberries paired with lemon or orange zest is superb! No mixer needed.

Moist Applesauce Quick Bread - With lots of applesauce and some dried apples for extra flavor, this bread is super moist and makes a wonderful breakfast treat.

French Yogurt Cake - Popular French dessert, fun to make with kids. No mixer or measuring cups are required, just a container of yogurt, a tablespoon and a teaspoon! It’s easily customizable by adding seasonal fruits or citrus zest.

Cranberry Blood Orange Quick Bread - Sweetened with honey and speckled with white chocolate and dried cranberries.

Raspberry White Chocolate Muffins - Moist and fluffy, loaded with fresh or frozen raspberries and white chocolate—a heavenly combination.

Lemon Muffins with Lemon Drizzle - Light, fluffy, tangy. They are super easy to make and taste amazing (highly rated).

Chocolate Chip Banana Bread - Gives you little melty bites of chocolate in every slice. My toddler's favorite.

Almond Cherry Muffins - Moist muffins are filled with sweet cherries and have a lovely almond flavor.
