🍫 February’s Baking Spotlight: The Science of Cocoa Powder

Cocoa powder comes in two main types—natural and Dutch-processed. Natural cocoa powder is acidic, lighter in color, and reacts with baking soda in recipes to provide lift. Dutch-processed cocoa powder and black cocoa, on the other hand, have been treated with an alkalizing agent, making it neutral in pH, darker in color, and smoother in flavor. It reacts well with baking powder because baking powder contains an acid (cream of tartar).

Because of these differences, they’re not always interchangeable in recipes! Knowing which type to use will ensure the best results in your baked goods.

Now that I got your attention, it seems like all eyes are on eggs (or the lack thereof) these days. Here in the U.S. egg prices have soared. I went to Costco on Saturday and they didn't have a single carton of eggs. Our local grocery store costs about $8/dozen right now. Other areas are paying $13/dozen We support a local farmer to purchase eggs at $4/dozen when they have eggs available, but demand is high too. As a result, it's been harder to bake cakes right now so... if you're in the mood...

Two years ago, I bought a tiny lemon tree with about 10 leaves on it from a grocery store here in Minnesota.And I know what you're probably thinking... "Stephanie, you can't grow lemon trees in Minnesota. It's way too cold." And you're right—it's much harder to grow citrus in cold climates. We're in zone 4b, which means long, brutal winters, while lemon trees thrive in zones 9-11. But I was determined. I thought keeping the tree indoors would be enough to help it survive.
